I picked up some fresh blueberries and decided to try my hand at muffins, as I love them so.
The cast:
The muffins:
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
The topping:
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon
Pre-heat oven to 400, get your muffin pan ready with either liners or grease those babies up.
Mix the dry ingredients, then add egg and milk. Gently fold blueberries in.
Mmmm. I dipped my finger in at this point, but you don’t have to.
Dump the goodness in your prepared muffin tin.
Now mix the topping mixture together. Make sure your butter is nice a cold. Sprinkle some on the top.
It’s supposed to make 8, but I only got 7. But, I’m practically famous for overfilling.
Bake around 20 minutes.
Bottom line: The kids loved these. I honestly wasn’t crazy about the topping, but I think that has to do with the fact that I’m partial to streusel, and this wasn’t close to that. It got pretty hard too. But, the muffin itself was really, really good.

I can give you a really good streusel topping recipe. It’s what I use on my coffee cake.
Give me a few minutes.
Crumb Topping:
2 c flour
½ c sugar
1/2c brown sugar
1 ½ tsp cinnamon (you can also add dashes of nutmeg, cardamom, etc. to experiment)
2 sticks butter (melted completely, this is important)
Combine flour, sugars, cinnamon. Combine with butter until crumbly.
Press crumb mix together with your fingers to form 3/4 inch chunks, sprinkle over batter. Bake as per directions.
You can divide this recipe, since it is the amount that you’d use for one 9×13 coffee cake. It will be too much for your muffins…but what I do is I use what I am going to, and then I freeze the rest and use it as directed. That way you can always have your topping for muffins. I use this for my blueberry muffins as well.
